    Carbonara has been the subject of some severe bastardization here in the states, where we regularly eschew Italian tradition in favor of garlic, bacon, and green peas for some reason. Today we're doing both the old-school and illegitimate versions of the hotly-contested dish, both of which deserve their place in your grandmother's handwritten recipe cards.

I make mine somewhere between the two I add garlic but leave in more of the fat. You can never have enough pepper.

Made this tonight. Was amazing. Made a mistake by making the pasta from the first dish and then following the directions for the second dish. Added more pepper, was amazing ... didn’t die from sodium overdose! Note to self: When adding pasta water to a dish later, DO NOT MAKE PASTA WATER “as salty as the sea”! 🤦🏻‍♂️

Mm no. You have to use red egg yolks only and don't salt the pasta at the final. The rest is ok, except using not unseasoned guanciale and using parmigiano and pecorino romano both at the same time. I think your Carbonara is ok for the 85% 👌🏼.

The REAL AND FIRST CARBONARA is not creamier as the second just because you didnt follow the recipe. More pasta you use, more pecorino romano and egg yolks you're gonna need. You have to use 2 egg yolks every 4½ oz of pasta. Stop disrespecting italian recipes

I 've done it with prosciutto and a slight touch of butter for better quality of fat. Once the sause is done succesfully you can continue to heat the pasta in a pan till the sause is creamy to your satisfaciton. I used a lot of olive oil infused with chilly and garlic under room temperature for a couple of days.

Italian here. Italy is a fucking mess, and carbonara is a really hot topic even inside italy itself, here's why: The state of italy is essentially made of 22 different regions, every region is incredibly unique, has a distinct culture and even his own dialect. All italians have a lot of stuff in common and we are all italians after all, but sometimes expecially reguarding food topics opinions can be very different from place to place. In the case of carbonara it's not an argument it's a FUCKING WAR, everyone has the original recipe and everyone else is wrong, in the end we kind of agree that the original recipe is the "romana" version, the first one of the video to be clear. But in any case, anyway you do it even if you do it like that some italian somewere WILL BE pissed off if you call it "the original" catbonara, and this is why a lot of italians are very salty under videos that pretend to show how to make the "original" carbonara. My final suggestiion is: make your carbonara the way you like it, even better try a lot of styles, kust don't commit hte fatal error to call it original, better don't even call it carbonara and you will be ok.

You added garlic because your guanciale isn't aged enough... So the taste of garlic goes well with the other ingredients. If you buy an Italian guanciale you don't need anything else because it's already tasty ; ) P.s.: I'm 100% Italian soooo almost an expert? 😏

A few thoughts: - Garlic is bad because it covers the flavor, you should taste the creamy yolks and the meat not garlic - Bacon is not the worst of all evils, Guanciale is used because it just tastes better and has a better texture than bacon or pancetta but it's not inexcusable to use either - Separating some of the fat is not wrong, you can have a cut of meat that has too much fat, in that case just fiscard the excess - There's a myth that carbonara is supposed to have a ton of black pepper fueled by the misconception that the name refers to its color but the name has nothing to do with it being full of carbon colored black pepper. So just add pepper to taste - I also personally don't hate the use of cream especially if it's used instead of the egg whites to give it a gentler flavor The problem with most of these dishes isn't much about traditions but certain things just make no sense, if you start adding a ton of onions or garlic or both just because you will end up with dishes that all taste the same, which I hope it's not your goal. I also noticed that this time he didn't use fresh pasta and it's great because the choice of pasta is not random, these dishes are calle "Pasta a la ..." because pasta is the main ingredient, it's the one you shouldn't screw up for any reason.

JJ it can work for sure but imho one of the things that makes carbonara really special are those meaty bits and the taste of the rendered fat, so not including pork is just going to make this dish way less interesting and yummy
